Our one-week Ayurvedic culinary programme introduces guests to the healing principles of Ayurveda through food. The programme begins with an introduction to Ayurvedic philosophy, covering the three doshas (Vata, Pitta, Kapha), the role of Agni (digestive fire) and kitchen staples like ghee, spices, grains, and legumes. Guests will explore the significance of taste (rasa) in dosha balance and learn to prepare digestive teas. A focus on the medicinal properties of spices follows, including how to prepare tempering (tadka) and create dosha-specific spice blends. Guests then delve into dosha-specific cooking – exploring grounding meals for Vata, cooling dishes for Pitta and light, energizing recipes for Kapha – learning to adjust ingredients and techniques according to individual constitutions and seasonal needs. The sessions also introduce sattvic foods that promote mental clarity and emphasizes seasonal eating, mindfulness in food preparation and the relationship between food and emotional well-being. The programme concludes with simple detox recipes, daily wellness practices (Dinacharya) and guidance on integrating Ayurvedic cooking into everyday life. Each session blends theory, hands-on cooking, tasting and reflective discussion to help guests reconnect with the therapeutic power of food.
